Chicken Teriyaki Pineapple Rice Bowls!

Hi Glampers! 

We hope everybody is having a wonderful summer, and for those of you in the States, we hope you had as great of a 4th of July as we did!

We had a really great time glamping in San Diego over the long holiday weekend, and wanted to share a fun recipe we made at the GGG Glampsite!

PINEAPPLE CHICKEN TERIYAKI BOWLS! 

Here is the step-by-step photo breakdown:

We used teriyaki marinade on chicken breast and prepped before we left. You will also need 1 pineapple for every 2 people.

 

Using our beloved Cabela's camp kitchen and portable sautee pan, we let the chicken cook.

Slice the pineapples in half and hollow our the center. We saved the fruit for fruit salad the next morning! On the grill, we made some minute rice while the chicken finished cooking.

Fill each pineapple boat halfway with rice. We chose to do side-by-side, but you could also layer rice and then chicken.

You guessed it! Next comes the chicken, topped with a little extra teriyaki sauce.
